Royal Caribbean Group’s Silversea Cruises brand has an exciting career opportunity for a full time Food and Beverage Operations Lead on the Hotel Operations Team reporting to the Director, Food and Beverage Operations.


This position will work onsite in Miami, Florida

Position Summary :


In this role, you would play a critical role in the end-to-end execution of Silversea award winning food and beverage program and experiences. This entails supporting the optimization of wine and beverage programs, operational process optimization, cross-functional collaboration, system support and continuous improvement across all shipboard restaurant and bar venues.

Essential Duties and Responsibilities :


  • Support shipboard teams in driving Guest satisfaction through consistent execution of restaurant and bar standards.

  • Collaborate with F&B leadership on programs related to Crew training, Human Resources policies, scheduling, and fleet-wide initiatives.

  • Analyze F&B performance metrics (guest satisfaction, revenue, operating expenses) and propose corrective action where needed.

  • Manage key operational data sources such as POS and menu management systems, activation trackers, and performance analytics.

  • Partner with the Charters & Incentive teams to standardize planning for weddings, charters, and group experiences.

  • Collaborate with Director, Food & Beverage and partners to curate and execute a consistent wine and beverage experience that aligns with brand standards, guest demographics and regional itineraries.

  • Support the sourcing and global procurement strategy for wines, spirits, and non-alcoholic beverages.

  • Monitor vendor performance and compliance, implementing corrective actions as needed to sustain fleet-wide consistency.

  • Collaborate with Director, Culinary Operations & Innovation to support standards, policies and procedures and recipe management.

  • Analyze and update recipes and menus to ensure nutritional and dietary guidelines of our guests are met.

  • Collaborate with our marketing team and other partners to update and innovate menus for all dining and beverage outlets.

  • Co-develop and maintain Standard Operating Procedures in partnership with key departments.

  • Provide pre-voyage planning and operational guidance to Charters, Global Support, IT and shipboard teams.

  • Manage the fleet-wide dining inventory strategy and ensure alignment with broader inventory initiatives.

  • Work closely with Procurement, Logistics and external vendors to improve sourcing and inventory accuracy.

  • Support RFP processes, master equipment lists, pricing updates, and the evolution of presentation standards across F&B.

  • Serve as the F&B lead for POS and other system platforms, ensuring optimization, training, and reporting are aligned.

  • Liaise with IT teams to develop system enhancements and resolve issues that impact dining or beverage operations.

  • Coordinate system-based projects tied to business goals in culinary, beverage, and service experience.

  • Collaborate with hotel operations and T&D teams to execute training and development strategies for F&B crew members.

  • Support recruitment, scheduling, and onboarding processes to ensure smooth shipboard operations.

  • Drive performance development, internal promotions, and skill-building initiatives across restaurants and bars.

  • Maintain structured pathways for crew growth within F&B through training content and progression frameworks.

Qualifications, Knowledge and Skills :

  • BA or BS degree in analytical related subject.

  • 5-7 years of relevant experience.

  • Strong problem-solving skills, with the ability to work independently and collaboratively.
